Cheesy Potatoes

6 medium potatoes
6 tbls. butter or margarine
4 1/2 tbls. flour
1/8 tsp. pepper
1 1/2 tsp. salt
2 1/4 cups milk
1 1/2 cups grated cheese

Cook potatoes with skin on. Cool, peel and slice.
Arrange potatoes in greased 2-quart casserole and pour cheese sauce over them. Bake at 350* for 20 or 30 minutes. May be prepared ahead of time and baked just before serving, although you should probably bake a little longer if they start out cold.

If you need to make more you can easily double recipe, that's what I usually do for our family and put in a 9x13 dish.

Sugar Cookies

One of Dad's favorites and it doesn't require a mixer. Millie this would be a good one for you :)

1 cup sugar
3/4 cup vegetable oil
1 egg beaten
2 cups of flour
1/2 tsp. cream of tartar
1/2 tsp. soda
1/2 tsp. salt
1 tsp. vanilla

Mix sugar, oil and egg. Sift together dry ingredients and add to sugar mixture. Add vanilla. Roll in balls, put on cookie sheet and flatten with a fork cris-crossing the fork design. Bake at 350* for 10-13 minutes. Sprinkle the top with sugar.

1-2-3-4 Cake (tastes like pound cake)



Cream 1 cup shortening
2 cups sugar

Add 4 eggs, one at a time, beating well.

3 cups flour
1/2 tsp. salt
1 cup buttermilk
1/2 tsp. soda
2 tsp. vanilla

Add flour and buttermilk alternately. Bake at 350* for 45 minutes to an hour in a bunt pan or 2 loaf pans

I sprinkle powdered sugar on top while its hot . it's usually better second day.

Enchilada soup

Ingredients
1 med onion chopped
2 tsp garlic chopped
1 can chicken broth "fat free"  I use bouillon cube
1 can beef broth "fat free "
1 can Rotel
5 oz chicken cooked (can or fresh). I usually use 2 cans of chicken. They are 13 oz each
1 Tbl steak sauce (A-1 or Heinz 57
7 oz green chilies
2 tsp chili powder
2 tsp cumin ground
2 tsp Worchestershire sauce
1/8 tsp pepper
3.5 cup water
8 corn tortillas cut in strips
13 oz velveeta light. I usually cut it into chunks so it melts faster

Instructions

Sauté in Pam : onion and garlic
Add: next (12) ingredients
Simmer: 1 hour turn off
Add: tortillas cut up and velvetta
Stir:until cheese is melted
Set: allow to marinate a little
Serves 8- 1 cup servings

Chili (Karen Clark's )

2 16oz kidney beans
2 16oz chili style tomatoes
2 lb hamburger meat browned
1 Medium onion chopped
1 Green pepper chopped
2 Clove garlic crushed
2-3 tbl chili powder
1 tsp. pepper
1 tsp. cummin
Salt to taste

Put In crockpot in order given
Stir
Cook on low 10-12 hours

Crockpot chicken and dumplings

2 cups cooked chicken diced or shredded
1 can cream of mushroom soup
1 can cream of chicken soup
2 soup cans of water
4 tsp. Of flour
1 chicken bullion cube
1/2 tsp. Black pepper
1 can (Pillsbury Grands Non-flaky) Biscuits

Combine all ingredients except biscuits into crockpot
Cut into quarters and stir into crockpot
Cover and cook on low 4-6 hours-stirring occasionally

Cook your chicken the night before and put ingredients in the next morning for a yummy dinner!

Cream Chicken With Corn Bread Top

6 tbls. Butter
6 tbls. Flour
1/8 tsp. Pepper
1 1/2 cups chicken broth
1 cup milk
2 cups cooked chicken pieces
Prepare white sauce with above ingredients adding the chicken pieces. Pour mixture into casserole dish. Spread corn meal mixture on top:
1/2 cup corn meal
1/2 cup flour
1 tbl. Sugar
2 tsps. Baking powder
1/2 tsp. Salt
1/4 tsp. Soda
Mix ingredients in bowl. Cut 1 1/2 tbls. Shortening and 1/2 cup sour cream. Spread on top of chicken dish. Bake at 400 for 25 or 30 minutes, til brown on top.
