Ready Bran Muffins



Pour :   2 cups boiling water over 2 cups 100% bran cereal (I use bran flakes)

Cream : 1 cup shortening with 2 cups sugar

Add : 4 eggs, beaten
          1 quart buttermilk
         

Add : the above bran mixture and mix

Fold in  : 5 cups of flour (white or combination of white and whole wheat) I've only used white
                5 tsp. soda
                1 tsp. salt
                4 c. 100% bran cereal

Store in refrigerator as long as 6 weeks

Bake : 375 for 20-25 minutes in greased muffin tins 3/4 full or in loaf pan

Great to keep on hand for breakfast.
Recipe can be cut in half or freeze part.

My kids usually just spray a cereal bowl with pam and microwave. we also like to sprinkle cinnamon and sugar on top!

Cheesy Potatoes

6 medium potatoes
6 tbls. butter or margarine
4 1/2 tbls. flour
1/8 tsp. pepper
1 1/2 tsp. salt
2 1/4 cups milk
1 1/2 cups grated cheese

Cook potatoes with skin on. Cool, peel and slice.
Arrange potatoes in greased 2-quart casserole and pour cheese sauce over them. Bake at 350* for 20 or 30 minutes. May be prepared ahead of time and baked just before serving, although you should probably bake a little longer if they start out cold.

If you need to make more you can easily double recipe, that's what I usually do for our family and put in a 9x13 dish.

Sugar Cookies

One of Dad's favorites and it doesn't require a mixer. Millie this would be a good one for you :)

1 cup sugar
3/4 cup vegetable oil
1 egg beaten
2 cups of flour
1/2 tsp. cream of tartar
1/2 tsp. soda
1/2 tsp. salt
1 tsp. vanilla

Mix sugar, oil and egg. Sift together dry ingredients and add to sugar mixture. Add vanilla. Roll in balls, put on cookie sheet and flatten with a fork cris-crossing the fork design. Bake at 350* for 10-13 minutes. Sprinkle the top with sugar.

1-2-3-4 Cake (tastes like pound cake)



Cream 1 cup shortening
2 cups sugar

Add 4 eggs, one at a time, beating well.

3 cups flour
1/2 tsp. salt
1 cup buttermilk
1/2 tsp. soda
2 tsp. vanilla

Add flour and buttermilk alternately. Bake at 350* for 45 minutes to an hour in a bunt pan or 2 loaf pans

I sprinkle powdered sugar on top while its hot . it's usually better second day.
